I have bought a roll of paper in IKEA department for kids, it sits on the right side of my desk and is rolled all over my desk. When the paper is full, I just roll more of it and on the left side, the log falls down. Every now and then, I migrate the important notes to obsidian.
Helped me a lot to move into more analog space, which helps me to think without having to touch the keyboard.
Right now, I'm in the middle of moving my desk to another part of the cottage to free up some space near my kitchen. Not sure how it's going to work. Only one way to find out.
I make notes to myself often on scraps of paper, as well as use my calendar for to-do's, but it's a bit of a mess. I purchased a desktop whiteboard and now I can keep track of my most urgent to-do's in 1 place without having to go into an app, or look at my calendar - for some reason, it works (perhaps there's just too much on my calendar). It has storage, a place for the markers, etc. so I can color code the notes as well.
I've started doing something similar, Barry. I use a dry erase board and then create four quadrants to classify my to-dos. It feels good to erase what I get done.
I like the quadrants - and yes it does! It's also more impactful/top of mind vs. putting it on a calendar for some reason...maybe because it's always there (vs. only visible on the calendar when that app is on my screen).

I agree about the app. I've tried. Something about seeing it in front of you or off to the side rather than looking at your phone.
